Baking your own treats isn’t just a healthier option. It’s great to get in the kitchen and indulge in some baking therapy with these simple muffins.

I’ve had my fair share of baking disasters in the past, and while I won’t be applying for the Bake Off anytime soon, I’ve definitely become a better baker. These muffins are a sweet and healthy(ish) treat that please my friends and family every time. So it’s time I shared the recipe again.

When you want to life a healthier lifestyle, it’s easy to decide to cut out anything sweet and ‘bad’. There are lots of diets that advocate the cutting out of entire food groups or being ‘clean‘ with food. This isn’t a healthy way to live.

One healthy change is to not rely on packaged and processed foods, and this includes foods that claim to be better for us. So if you’re craving a sweet treat, don’t deny yourself and get in the kitchen. You can put on some music, a podcast an episode of your favourite show and try some baking therapy.

This recipe is dairy free thanks to the use of oil instead of butter and with 3 bananas and a generous helping of walnuts, there’s plenty of vitamins fibre mixed in for food measure.

Walnuts – Pandora's Health

Ingredients


  • 3 bananas
  • 40g of walnuts – with a few more bits to put on top of the muffins
  • 250g plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 200g caster sugar
  • 120ml vegetable oil (or another flavourless oil)
  • 1 egg

Recipe


  1. Preheat an oven to 180ºC/Gas 4 and line a tin with muffin cases
  2. Mix the oil, egg and sugar together for a couple of minutes until pale
  3. Chop up the walnuts and mash the bananas
  4. Add the walnuts and bananas to the bowl and mix
  5. Add the flour, baking powder and salt and mix thoroughly
  6. Bake for 30-40 minutes until the muffins are golden brown
